The Traybake Series Episode 2: Celebration Biscuit Bars

This recipe is maybe the quickest and easiest of the current series I have planned. It is perfect for #parties, #picnics or personal consumption!

These #biscuit bars use store bought biscuits so require minimal effort, few ingredients and technically, no baking at all.

It can be a fun activity if you are wanting to bake with the kids or if you are entertaining and want to lay out some tasty bites and as an added bonus you can let out any pent-up frustration while you are smashing your biscuits!

The recipe itself will take no longer than an hour and requires under 10 ingredients. I hope you enjoy it. Remember to tag me in any #Instagram posts so I can see how they turned out!

Time: 1 hour


Serves: Makes 12 pieces


Ingredients:


For the base:

200 g digestive biscuits

150 g butter

50 g sugar

Sprinkles


For the topping:

100 g butter warmed to room temperature

175 g icing sugar

1 tsp vanilla essence

200 g white chocolate

Sprinkles

Food colouring of your choice


Method:

  1. Melt your butter in the microwave. Whilst the butter is melting, finely crush your digestive biscuits.

  2. Weigh out your sugar and combine with the crushed biscuits, butter and sprinkles in a mixing bowl.

  3. Press the mixture firmly into a foil tray and place in the fridge to cool.

  4. In another mixing bowl whip your butter into a smooth mixture

  5. Add the icing sugar and vanilla essence until combined. If your mixture is looking a little stiff, add some lemon juice or milk, a little at a time, until you reach a smooth and soft consistency.

  6. Add your food colouring and mix well. Spread onto your biscuit base and place back into the fridge.

  7. Melt the white chocolate in the microwave. Leave to cool for 5 mins (so it doesn't melt the butter icing) before pouring on top of your biscuit bars.

  8. Spread evenly, top with sprinkles and leave to cool before slicing up!
